"Chop Suey" Is the title of my show featuring Chinese American Restaurant neon signage. The key word here is Chinese American Restaurants, as time goes by more of these restaurants are disappearing and being replaced by authentic Chinese cuisine. Gone from the menu will be dishes like Egg Foo Young, Almond Fried Chicken bathed in brown gravy, Chop Suey, Subgum Chow Mein with hard crisp noodles, and BQ pork with a dipping dish of Chinese hot mustard, catsups, and sesame seeds.
